Tomatoes offer so many delicious possibilities – slice them, sauce them, turn them into salsa! Nothing compares to vine-ripened tomatoes, fresh from the garden. We offer a selection of standards and heirloom varieties. Both raw and cooked tomatoes are an excellent source of vitamin C and a good source of vitamin A. Tomatoes also are a source of lycopene*, a powerful substance that researchers believe may help prevent prostate cancer in men.
*What is Lycopene?
Lycopene is part of the caratonoid group of substances. There is some science behind what lycopene is chemically and why it is the color it is. Lycopene is responsible for the bright red color in certain foods such as tomatoes. As a result of this striking color, it is actually approved for use as a food coloring. Even though this is a worthy use, it is not exactly what lycopene is known for. The various lycopene benefits such as being a cancer fighter and antioxidant, are what put this substance on the map, not its color.
